Ingredients

  • 1 ½ cups rolled oats
  • 1 cup unsweetened almond milk
  • 1 ripe banana, mashed
  • ½ cup maple syrup
  • 1 cup fresh blueberries
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt

Method

  1. In a mixing bowl, combine rolled oats, almond milk, mashed banana, and maple syrup. Mix well and let it sit for 5 minutes.
  2. In another bowl, whisk together baking powder, baking soda, cinnamon, and salt. Add the dry ingredients to the wet mixture and stir until combined.
  3. Gently fold in the blueberries, being careful not to crush them.
  4. Preheat your air fryer to 180°C (356°F) for 5 minutes. Line a muffin tin with silicone liners or spray lightly with oil.
  5. Spoon the batter into the muffin tin, filling each cup about ¾ full. Air-fry at 180°C (356°F) for 12-15 minutes or until golden brown.
  6. Remove from the air fryer and let cool for a few minutes before serving.
