Ingredients

  • 10 rice paper wrappers
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers
  • 1 cup shredded cabbage
  • 1/2 cup chopped green onions
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp garlic powder
  • Spray oil for cooking

Method

  1. In a large bowl, mix the shredded carrots, bell peppers, cabbage, green onions, soy sauce, sesame oil, and garlic powder.
  2. Soak one rice paper wrapper in warm water for about 15-20 seconds until soft. Remove and lay it flat on a clean surface.
  3. Place a generous amount of the vegetable mixture in the center of the wrapper, fold the sides over, and roll tightly to seal.
  4. Repeat the process with remaining wrappers and filling, placing the spring rolls in the air fryer basket in a single layer.
  5. Spray the spring rolls lightly with oil, then air fry at 200°C (400°F) for 10-12 minutes, or until golden and crispy.
  6. Serve warm with your favorite dipping sauce.

Pro tips for maximum crisp

  • Ensure the rice paper wrappers are soaked just until pliable to avoid tearing.
  • For extra crispiness, spray the spring rolls lightly with oil before frying.
  • Feel free to experiment with different fillings like tofu, mushrooms, or herbs!
